Shrimp Fried Rice

#Recipe 3

PALEO STIR FRY : SHRIMP FRIED "RICE"

It's been a week that I don't eat rice at all. Yes, I am afraid that instead of loosing weight, I'll gain more. As I was browsing to lists of recipe of pale diet,  this Shrimp Fried Rice caught my attention. He mimicked rice using cauliflower which is unusual and seems very mouthwatering. 


INGREDIENTS

* 1 head of cauliflower
* 1/2 lb of medium-sized shrimp, peeled and deveined
* 1/2 cup snow peas
* 1/2 cup carrots, peeled and chopped thinly
* 1 red bell pepper, chopped
* 1 yellow squash shopped
* 1/2 yellow onion, minced
* 1 tbs fresh ginger, minced
* 3 tbs coconut oil
* 2 tbs coconut aminos
* 1/4 tsp red pepper flakes
* 1/4 tsp salt

INSTRUCTIONS

1. Using a cheese grater, grate the head of cauliflower into a rice-sized pieces. If you're fancy and have the equipment, use a food processor works instead of the cheese grater. If you are as severe to doing the dishes as I am, you can grate the cauliflower right into a wok or large skillet after step two. But if you're the more civilized type and don't mind the extra clean up, using a large bowl may be preferable.

2. Heat one tbs of the coconut oil over a medium heat in a large skillet, pan or wok. Add the onion and half of the garlic and saute until the onion is translucent. Add the grated cauliflower, salt, and black pepper and continue to cook, stirring often until the cauliflower reached the desired texture (about five minutes).

3. Remove the cauliflower from the skillet and set aside.

4. Placing the wok back on the heat, add another table spoon of coconut oil. Once the oil is melted and hot, add the remaining garlic, half of the ginger, and the red pepper flakes and saute briefly.

5. Add the carrots, yellow squash, red bell pepper and snow peas to the skillet. Stir fry until just tender crisp (still below your desired level of doneness). remove vegetables from skillet and set aside.

6. Placing the skillet back on the heat, add the remaining coconut oil. Once the oil is heated, add the remaining ginger and the shrimp. Stir fry the shrimp until cooked. Add the vegetables back to the skillet and stir fry with the shrimp for a minute or two. Add one tablespoon of the coconut aminos and continue to stir fry.

7. Place as much of the cauliflower rice into the skillet as you would like with the meal. If you grated the entire head of cauliflower, it is likely that you will have plenty of left overs. Reduce the heat and add the remaining coconut aminos.

8. Stir the mix together until components are cooked to your desired taste and the coconut aminos has coated the mixture well. Remove from the wok and serve immediately.

Breakfast Apple Hash

#Recipe 2

APPLE HASH


INGREDIENTS

* 2 eggs beaten
* 2 slices of bacon, cut into small strips
* 1 apple, peeled and chopped
* 5 walnut leaves
* 1 tbs grass fed butter
* 1/2 tsp of cinnamon (or more as preferred)

INSTRUCTIONS

1. In a large skillet, scramble the eggs in the butter and remove.

2. Add bacon to the skillet and cook until just about done. Add the apple pieces and cook with bacon until the apple is slightly soft.

3. Crush the walnut and add to the bacon and apple.

4. Return the eggs to the skillet and stir all the ingredients together. Add the cinnamon to the mixture and stir a few times.

Wild Salmon and Sauteed Spinach

#Recipe 1

WILD SALMON

This wild salmon and sauteed spinach meal is packed with protein, vitamins and flavor! Now a days, people are aware how great omega-3 for us. nonetheless, there are some precise benefits it has. It has been linked to improved mood and cognition, joint protection, eye benefits and reduces risk of cancer, not to mention the exceptional taste when it cooked up right!


INGREDIENTS

Serves 3

* 3 salmon steaks                                     

* 4 tbsp extra virgin olive oil
* 1/4 cup lemon juice
* 1 tsp paprika
* 1 tsp dried dill
* 1 tsp garlic

DIRECTIONS

1. Rinse salmon steaks in cold water.
2. Cover surface of non-stick fry pan with olive oil.
3. Combine remaining ingredients and brush on salmon steaks.
4. Place in pan and cook on low, covered until flaky (about 15 minutes).
5. Prepare sauteed spinach.

SAUTEED SPINACH


INGREDIENTS 

* 1 large bag fresh organic baby spinach leaves
* 2 tbsp extra virgin olive oil
* 2 cloves fresh garlic, minced

DIRECTIONS

1. Saute garlic in olive oil on love for 5-10 minutes
2. Add spinach, cover and simmer until tender, stirring frequently.

Paleo Diet ...

Shedding pound was not really my goal for a longest time.I am contented with my weight and I think my body built is quite good to my belief. I am pretty much blessed that no matter how much I ate, I'm still on my ideal weight.  

Not until one day, I noticed that some of my jeans/pants couldn't fit anymore. I immediately weighed myself and checked my stats. I was so horrified when I found out that from normal 50kg I turned 55kg and from size 6 to size 10. Maybe I'm just over reacting and it's not alarming yet to other people but seriously, I felt so depressed and promptly check on which and what kind of foods should I eat and avoid. 

At my age now ( I am turning 39 this year) it will be harder for me to lose weight and I don't wanna end up in diet starvation. While surfing the net, I bumped to a site which provide a proper diet. It's Paleo or Paleolithic Diet that says it's a diet to increase our energy, the ability to burn fat, and gets you in touch with your natural instincts. It's not just a way to lose weight, it's also a healthy approach to making you body indestructable. The general idea of this diet is to get rid of anything artificial from your system.

I made a research and found out which foods are on the list of Paleo Diet which will help me not only to shed weight but to live a healthy and longer life. I was able to get some recipes as well which will be posted soon. So stay tuned!
