Tuna Salad ... my way

Summer is kicking off, everyone is gearing up in getting in shape for the beach. While some women and men are focus from purely weights to tone down to achieve their beach body,  I know some people out there (like me) eat their way to sexy.

Traditionally, tuna is made of mayo (which is a lot of saturated fats), onion, pepper and a bit of celery. But today I am excited to share with you my way of making a Tuna Salad. Excuse me as I'll make you spend a little extra as this Tuna Salad is loaded with fresh vegetables ingredients to increase it's nutritional value. To add some color, flavor and texture, we will add olive oil and squeezed of lemon as a dressing.


Ingredients

  • Shredded carrot (optional)
  • One can of tuna
  • Cherry tomatoes (optional)
  • One can of whole kernel corn (optional)
  • Mayo (optional)
  • Pickle relish
  • Onion (optional)
  • Salt & Pepper
  • Lettuce (I prefer Romaine & Oak Leaf  for this)

Method

Mix tuna, mayo, relish and salt & pepper together in a salad bowl.
Add shredded carrots and cheese.
Add some cherry tomatoes and lots of lettuce.
Toss

Simple and easy! It won't eat much of your time in preparing this. Allow yourself  to try and see what you think!

Btw, it would be good to have some wheat crackers to complete your amazing descent healthy meal.
